Recipe Entry: Naked Spring Rolls


Margo sent me this recipe entry. She blogged about it here. She says, "I call this salad "Naked spring rolls" and I would probably serve this with a soup for dinner. Maybe even miso soup which is fast pantry food around here. Naked spring rolls do, however, have a carb, protein, and vegetables."

Naked Spring Rolls

2 c. leftover cold rice (you could use cold noodles)
3 c. sliced Chinese cabbage (or regular cabbage)
3-4 chopped scallions
1 grated carrot
1/2 c. chopped cilantro
2-4 Tbs.??? Hoisin sauce to taste - it's no chore to taste it until you get it right!

We garnished our naked spring rolls with chopped salted peanuts.

You know what you should do? You should get this printed out into a real cookbook!! (I think there are sites out there that let you do that.) I'd buy one!
