Thanks Martha!

A few days ago, I inventoried my kitchen and made a list of possible meals, dishes, etc that I already have the supplies for. I read recently that this is a good way to cut back grocery bills...makes sense...use what you have! I really enjoy trying new recipes so I was a little concerned that this approach would limit my ability to try new things. Not so though! I was excited to find a recipe in my Martha Stewart Everyday Food magazine that used all sorts of things I have on hand. I made this delicious Carrot Tea Cake with Cream Cheese Icing. It was another winner from Martha. It is really more of a bread than a cake and wasn't overly sweet. The icing was the best part though. I used fat free cream cheese and it turned out great.

Good idea - look to see what you have and go from there - looks like something my Mennonite Mom would do just naturally!! Gorgeous cake - can I have a piece?

Awww, I have been missing the bloggy notes!

Your "using up what you've got" reminds me of moving--I feel like I've done that a lot lately. It's an art, I'm convinced of it!

Sounds like delish cake, too!
