One thing that I love about fall and winter is making and eating SOUP. It is easy, comforting, warm, cheap and usually makes a lot. Today was rather grey and then rainy tonight so it was the perfect time to make one of my favorites: Tortellini Soup.
Tortellini (or Ravioli) Soup
olive oil
1 small diced onion
2 cloves garlic, minced
sliced mushrooms
1 can diced tomatoes
1 carton chicken broth
1 package of cheese tortellini or ravioli
In a large pot, saute garlic, onions, and mushrooms in olive oil until tender. Add a can of diced tomatoes (either Italian style tomatoes or throw in some Italian seasonings like basil and oregano). Add broth and bring to a boil. Add tortellini or ravioli and cook until tender. Serve with Parmesan cheese and bread. Enjoy!
